Chicken and Black Bean Soup with Roasted Tomato Broth

Ingredients

  • light olive oil for grill and chicken
  • 2 boneless, skinless chicken breasts
  • 7 medium tomatoes, cored
  • 1 large onion, cut into large pieces ( 1 ½ inches)
  • 1 tablespoon light olive oil
  • 3 cloves garlic, peeled
  • ground cumin to taste
  • 5 cups low-sodium chicken broth or vegetable broth
  • 1 teaspoon chili powder
  • ¼ teaspoon hot pepper sauce (like Tabasco)
  • 2 (15.5-ounce) cans black beans drained and rinsed
  • ¼ cup reduced-fat sour cream
  • ¼ cup chopped cilantro
  • sea salt and fresh ground black pepper to taste

Preparation:

Heat a grill pan or outdoor grill over medium heat.

Lightly oil the grill and brush the chicken breasts lightly with oil. Season with salt and pepper. Cook the chicken on the grill, covered until the meat is cooked through, about 4 minutes per side. Cool and shred the chicken, then set aside.

While the chicken is cooling, cook the tomatoes on the grill until charred and soft, about 8 minutes. Place the tomatoes in a blender and blend until smooth. Set aside

Heat a large saucepan over medium heat. Add the1 tablespoon olive oil followed by the garlic and cumin. Cook until you can smell the aroma of the garlic, then add the broth, reserved tomatoes, chili powder, hot sauce, black beans, salt, and pepper. Bring to a boil, then reduce to a simmer and cook for 5 minutes. Ladle the soup into bowls and garnish with sour cream and cilantro.

Fresh Cucumber-Avocado Salad

Ingredients

  • 4 large Bibb or Boston lettuce leaves, torn into bite sized pieces
  • ¼ red onion, very thinly sliced into rounds
  • ½ English cucumber, sliced ¼ inch thick
  • 1 medium avocado, pitted, peeled and sliced ¼ inch thick
  • 4 lime wedges
  • sea salt and fresh ground black pepper to taste

Preparation

In a large salad bowl, combine the lettuce, onion, cucumber, salt, and pepper and gently toss to combine. Serve the lettuce onto each serving plate and top with an even amount of avocado and a lime wedge on the side.
